US processor Fortune Fish & Gourmet has announced the opening of a new fish cutting facility at its Northeast Regional Headquarters in Union, a town located in the state of New Jersey.

Consequently, the company adds a new facility to its 110,000 square-foot complex in Bensenville, Illinois, which already includes eight additional cutting rooms.

"Our new cutting room will allow us to offer our chefs and retailers even more selection and personalization than they’ve already come to expect from us," said Jason Wagner, Senior Vice President of Fortune East.

A team of fish cutters will work 6 days a week at this new facility under the Food and Drug Administration (FDA) guidelines and the State Hazard Analysis and Critical Control Point regulations.

"With the fresh fish processing room opening in NJ, we can offer even more of our customers the freshest fish tailored to their needs," Fortune CEO Sean O'Scannlain added.
