At an event where attendees could taste different dishes with totoaba as the star ingredient, Earth Ocean Farms (EOF), the regenerative aquaculture company included in Cuna del Mar's portfolio, presented Santomar. The new brand represents a new standard in the seafood industry not only in terms of quality and flavor but also with processes that respect the ocean and the environment, and add value for coastal communities.

"This new brand represents an important step towards generating a healthy ocean and helping to restore endemic species by promoting economic growth in our region," said Pablo Konietzko, CEO of Santomar.

A deep respect for the seas

In Spanish, the word Santomar comes from the union of two other words, "Santo" and "mar" (Saint and sea), so it is not surprising that the new brand's slogan is "Sit Mare Gloria" (Latin for "Glory to the seas"). "Santomar is the name that defines our identity today, a wise move, as it honors and shows the deep respect we have for our seas, their species, and their people," Konietzko emphasized.

The name changes, but not the philosophy. The process, responsible practices, and innovative technologies behind the new brand for EOF are the same as before the rebranding. Focused on implementing sustainable methods, such as high-level infrastructure in the open sea, environments suitable for farming, and rigorous quality controls that ensure the best conditions for the species, its fish farming process positively impacts the environment.

Santomar believes that regenerative aquaculture must be managed in the best possible manner, as this is the only way it can become a positive and sustainable option for the future. A key player in the restoration of marine resources and the protection of endemic species, Santomar is also a promoter of Mexican gastronomy, with species such as red snapper (Lutjanus campechanus), oysters (Crassostrea), and its star product, the totoaba (Totoaba macdonaldi).

A benchmark of Mexican gastronomy with absolute traceability

With its mission and values as a guide, Santomar seeks to introduce a new ingredient to the Mexican gastronomic community: the Santomar Totoaba. Endemic to the Gulf of California and farmed in La Paz, Baja California Sur, the totoaba is a white-fleshed fish with a unique flavor and outstanding versatility, which makes it a reference of Mexican gastronomy, part of its cultural heritage, appreciated in traditional cuisine, and cannot be found anywhere else in the world.

For its production, Santomar has marine farms in the Sea of Cortez - near La Paz, far from the coast in the open sea -, structures that take advantage of the state-of-the-art technology of regenerative aquaculture to offer an environment and habitat in the depth of the sea that favors the well-being and growth of the species. Its meticulous processes ensure the absolute traceability of its totoaba, from the management of broodstock to the production of juveniles, guaranteeing optimal conditions for their breeding, and managing to offer it 52 weeks of the year.

In fact, one of the added values of Totoaba Santomar is the ability to identify each fish through a unique QR code, which certifies and provides transparency about its origin and harvest. In addition, the company has expanded its presence nationwide, reaffirming its commitment to bring Totoaba to more corners of Mexico.
