Trade body Salmon Scotland released figures on the value of fish sales for the 12 months to August 2025, revealing that sales of Scottish salmon in the UK soared during that period.
Specifically, from August 2024 to August 2025, salmon sales increased by 7.2% to GBP 1.5 billion, accounting for almost a third of all fish sales in the United Kingdom.
Thus, amid the overall increase in demand for fish in the country, year-on-year growth for salmon was almost double the 3.7% increase recorded in the overall fish category.
Salmon therefore proved that it remains the UK's favorite fish, maintaining its leading position in the UK seafood sector with a 32% share of total value and selling almost three times more than cod, its closest competitor.
Likewise, as shown in the infographic below, salmon is also well ahead of other mass-market products such as tuna and prawns.

"With salmon now accounting for nearly a third of all fish sales in the UK, it's clear that more people are choosing it for its health benefits and sustainability," said CEO Salmon Scotland, Tavish Scott, commenting on these results.
"Shoppers continue to trust its quality, with Scottish salmon renowned for its superior taste and responsible farming practices," Scott continued. "This consumer demand is great news for the nation's health and the economy, supporting thousands of jobs across Scotland's rural and coastal communities."
Salmon Scotland also emphasized that Scottish salmon remains the UK's largest food export, with international sales on track to exceed the GBP 1 billion mark for the first time this year.
According to recent figures analyzed by Salmon Scotland, even with tariffs acting as a significant barrier, salmon exports from Scotland increased by 33%, reaching GBP 941 million in the 12 consecutive months to the end of June.
