Scottish processor Aquascot is collaborating with the new 'Simply Bake & Serve' product range offered by Waitrose. The goal of this offering is to make life easier for consumers, as by simply serving the product, they can enjoy high-quality fish with minimal effort.

The 'Simply Bake & Serve' dishes are handmade using the papillote method, where the fish is cooked in parchment paper, preserving all its delicate flavors and aromas. By retaining the natural moisture of the food, you can enjoy an exceptional dining experience in the comfort of your own home.

Aquascot is the primary supplier of Scottish salmon and trout for Waitrose. It also collaborates with its whitefish supplier, Flatfish Ltd. Together, both companies strive to offer a wide selection of fish, including salmon, haddock, and cod, catering to all tastes.

In 2023, Waitrose operated 329 supermarkets across the United Kingdom, and was ranked 10th place within the UK's most sustainable brands by market research consultancy Impact’s Great Green Sustainability Study. In November 2024, it appointed seafood sustainability expert Katie Keay as its new Senior Manager for Fisheries and Aquaculture.
