Crab meat producer Blue Star Foods Corp. has announced the recent creation of an Asian Food Division, which focuses on high-value sushi categories. Under the Blue Star brand, this product line responds to the growing popularity of Japanese cuisine, especially sushi and healthy food.

According to data provided by Blue Star Foods, sushi restaurants in the U.S. have increased by 163% over the last 10 years, reaching $27.9 billion in 2022. The market is expected to continue growing, with an estimated value of $34.9 billion in 2025.
The main farming areas corresponding to high-value sushi categories are typically Hamachi, responsibly raised and harvested in Japan's Kagawa prefecture, the Seto Inland Sea, and Kagoshima Bay.
